Non Organic King Scallops These are gathered by divers from the Lulworth Banks in Dorset from a 10 mile stretch of coral reef which, being inaccessible to trawlers ensures a plentiful and sustainable supply. During unfavourable conditions our scallops are sourced from Western Scotland where the mountains ensure that some bays are sheltered from the wind. Non Organic Monkfish (ANGLER FISH) These are a deep water fish of which only the tails are eaten. Ours are caught in Torbay, Devon. It has a dense, meaty flesh which cooks well on a high heat and is best pan fried, barbecued or roasted whole.
